“ At the table! The taste of the Italians 1970-2050 "is an exhibition that will have as its objective the story of how the relationship between Italians and food has profoundly changed in recent decades with a decisive paradigm shift between the traditional image of our national cuisine modern and an increasingly complex, segmented and contradictory relationship of a country that was profoundly changing its habits, consumption and social composition.
We have placed the word "taste" at the center of our reflection because it best represents that mix between individual pleasure, collective sharing, cultural phenomenon and scientific sign capable of recounting research in the field in the contemporary situation.
